The combination of crunchy tortilla chips, spiced meat, gooey cheese, and fresh, vibrant toppings is irresistible. Whether for a casual dinner or a party snack, nachos are always the perfect choice. There’s nothing quite like a tray overflowing with nachos for an entertaining and playful appetizer. The base starts with everyone’s favorite – crunchy tortilla chips. The chips then get layered with all the savory Mexican fixings you can imagine – spiced meat, gooey cheese, beans, pickled jalapenos, avocado chunks, salsa – you name it!

Ingredients

  • Ground Beef: Use 1 lb ground beef, or substitute with pork or chicken. For variety, shredded or diced meats also work great.
  • Taco Seasoning: Homemade is best, but store-bought works too.
  • Refried Beans: 1 can of refried beans, or use black or pinto beans if preferred.
  • Tortilla Chips: About 13 ounces of tortilla chips, any variety.
  • Cheese: A mix of shredded cheddar and Monterey Jack (around 2 cups).
  • Pickled Jalapeños: Optional but adds a delicious tart and spicy contrast.
  • Fresh Toppings: Diced tomatoes, red onion, avocado chunks, sour cream, and cilantro.

Instructions

Step 1: Cook the Ground Beef
  • In a skillet over medium heat, cook the ground beef for about 5 minutes until browned
  • Add taco seasoning and cook for an additional 5 minutes
Step 2: Cook the Refried Beans
  • Add the refried beans to the skillet with a splash of water
  • Stir until fully combined and heated through
Step 3: Prepare the Nachos
  • Preheat the oven to 400°F (200°C). On a rimmed sheet pan, spread the tortilla chips in an even layer
  • Top with the ground beef mixture, cheese, and jalapeños
Step 4: Bake the Nachos
  • Bake for 10 to 15 minutes, until the cheese has melted and the edges of the tortilla chips are golden
Step 5: Add Fresh Toppings
  • Remove the nachos from the oven and immediately top with diced tomatoes, red onion, avocado, sour cream, and cilantro
