For oatmeal fans — this berry baked oatmeal is another delicious way to enjoy oats for breakfast! The top is slightly golden while the inside is soft and loaded with a pretty sweet berry assortment. Especially when you’ve got more than one person at the breakfast table! It’s easily sliceable into 6 portions and can be jazzed up with a quick dollop of creamy yogurt.

Ingredients

  • 2 cups old-fashioned rolled oats (certified gluten-free, if needed)
  • ½ cup sliced almonds
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 cups milk (dairy or dairy-free)
  • ⅓ cup honey or maple syrup
  • 2 large eggs
  • 4 tbsp melted butter or oil
  • 2 tsp vanilla extract
  • 2 cups frozen mixed berries (plus extra for topping)

Instructions

Step 1: Prep the Baking Dish
  • Preheat the oven to 375°F (190°C).
  • Lightly grease a 9-inch square baking dish and set aside.
Step 2: Mix the Dry Ingredients
  • In a large bowl, combine the oats, almonds, cinnamon, baking soda, and salt.
  • Stir until evenly mixed.
Step 3: Mix the Wet Ingredients
  • In another bowl, whisk together milk, honey or maple syrup, eggs, melted butter, and vanilla.
  • Mix until smooth and well combined.
Step 4: Combine and Stir
  • Pour the wet mixture into the dry mixture.
  • Add the frozen berries and gently stir everything together.
  • Don’t worry if the berries tint the liquid purple—this is normal.
Step 5: Assemble and Bake
  • Pour the mixture into the prepared baking dish.
  • Sprinkle extra berries and almonds on top for a pretty finish.
  • Bake for 40–45 minutes or until the top is golden and the center is set.
  • Allow to cool slightly before slicing and serving.
