Fast food is still a weekly routine for much of the country. Health researchers say that matters because the classic drive-thru meal is packed with the exact ingredients that can wear down gut health over time.
In the United States, the concern is not one single food but one familiar meal pattern: a fast-food combo high in ultra-processed ingredients, saturated fat, sodium, and added sugar, and low in fiber.
A common weekly meal with an outsized health effect
On any given day, 36.6% of U.S. adults eat fast food, according to the Centers for Disease Control and Prevention report based on 2013-2016 federal survey data. That daily figure helps explain why a once-a-week burger, fries, and soda habit has become a focus for nutrition researchers in 2026.
A 2024 review in the journal Nutrients found diets high in ultra-processed foods were consistently linked to lower gut microbiome diversity, a key marker of digestive resilience. Researchers have also tied low-fiber, high-fat meals to inflammation and shifts in beneficial bacteria, including lower levels of species that help produce short-chain fatty acids.
The standard fast-food meal often checks every box experts worry about. A burger meal from major chains can easily top 1,000 calories, while a large order of fries can add more than 500 milligrams of sodium and a large soda can deliver more than 60 grams of sugar, depending on the brand.
Why the gut takes the hit
The gut microbiome is made up of trillions of microorganisms, and many of them depend on fiber to thrive. The U.S. Food and Drug Administration says most Americans get only about half of the recommended daily fiber intake, which ranges from 28 to 34 grams a day for many adults.
When a weekly meal is built around refined buns, processed meat, fried potatoes, and sugary drinks, researchers say the microbiome gets less of the fuel it needs. A 2021 study published in Cell found that diets lower in diverse plant fibers were associated with reduced microbial diversity and weaker production of compounds that support the intestinal lining.
Dr. Will Bulsiewicz, a South Carolina gastroenterologist who frequently comments on microbiome research, has said diversity in plant foods is one of the clearest predictors of a healthier gut. By contrast, ultra-processed meals tend to combine emulsifiers, preservatives, and low-fiber starches that several animal and human studies have flagged as possible disruptors.
What Americans can do without giving up convenience
Nutrition experts are not saying one burger will suddenly cause disease. The concern, according to Harvard T.H. Chan School of Public Health guidance updated in recent years, is repetition: a pattern of ultra-processed meals over months and years can crowd out beans, whole grains, fruit, vegetables, and fermented foods.
That matters because the American Gut Project and other microbiome research efforts have found people who eat at least 30 different plant foods a week tend to have more diverse gut bacteria than those who eat 10 or fewer. Diversity, researchers say, is linked with more stable digestion and better metabolic health markers.
For people who rely on fast food once a week, dietitians say small swaps can reduce the impact. Choosing grilled chicken over processed patties, skipping soda, adding a side salad or beans, and aiming for 25 to 38 grams of fiber per day, the range used in U.S. dietary guidance, can make a measurable difference over time.
