Featuring a graham cracker crust, a rich chocolate cheesecake filling, and a toasted marshmallow topping, these bars are the perfect treat for any occasion. They’re easy to make and will surely be a hit with family and friends.

Instructions

  1. Preheat the Oven:
Preheat your oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper,
allowing the paper to hang over the sides for easy removal.
  2. Prepare the Crust:
  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and
melted butter. Mix until the crumbs are evenly coated.
  • Press the mixture firmly into the bottom of the prepared baking pan to create an
    even layer.
  • Bake the crust in the preheated oven for 10 minutes. Remove from the oven and
allow to cool slightly while you prepare the filling.
  1. Prepare the Cheesecake Filling:
  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add the granulated sugar and continue to beat until well combined.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract, sour cream, and heavy cream until fully incorporated.
  • Gently fold in the melted and cooled chocolate chips until the mixture is smooth.
  1. Bake the Cheesecake:
  • Pour the cheesecake filling over the cooled crust and smooth the top with a spatula.
  • Bake in the preheated oven for 30-35 minutes, or until the center is set and slightly
    jiggles when shaken.
  • Remove from the oven and allow the cheesecake to cool to room temperature, then
refrigerate for at least 2 hours or until fully chilled.
  1. Add a Chocolate Layer:
  • Melt the chocolate and spread it evenly on top of the cheesecake.
  • Allow the chocolate to set before adding marshmallows.
  1. Add the Marshmallow Topping:
  • Preheat your oven’s broiler.
  • Evenly spread the mini marshmallows over the chilled cheesecake chocolate layer.
  • Place the pan under the broiler for 1-2 minutes, watching carefully, until the
marshmallows are golden brown and toasted.
  • Remove from the oven and allow to cool slightly.
  1. Drizzle with Chocolate (Optiional):
  • Drizzle the melted chocolate over the toasted marshmallows using a spoon or
    piping bag.
  • Allow the chocolate to set before slicing the bars.
  1. Slice and Serve:
  • Use the parchment paper overhang to lift the bars out of the pan.
  • Cut into squares and serve.
