Instructions

Step 1: Make the Dough

  1. In a large mixing bowl, whisk together the flour, sugar, and salt.
  2. Add the cold, cubed butter and use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, 1 tablespoon at a time, mixing just until the dough comes together. Avoid overmixing.
  4. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Step 2: Roll Out the Dough

  1. On a lightly floured surface, roll out one disc of chilled dough into a large rectangle about 1/8 inch thick.

Trim the edges and cut the dough into equal rectangles, approximately 3×4 inches. Repeat with the second disc of dough.

Step 3: Assemble the Pop-Tarts

  1. Place half of the rectangles on a parchment-lined baking sheet.
  2. Spoon about 1 tablespoon of peanut butter into the center of each rectangle, spreading slightly but leaving a border.
