It’s not the food but water driving Cyclospora Outbreaks

Cyclospora outbreaks in the U.S. are usually linked to fresh produce, but the current spike is raising wider concerns about how food is grown and handled. In this outbreak, which is now known to involve 34 states and about 7,000 confirmed and suspected cases, experts say the stronger clue may be water used in fields or processing. The concern is not just what people ate, but how contamination may have entered the food system in the first place.

The outbreak is spreading across dozens of states

The current Cyclospora outbreak is now known to involve 34 states and roughly 7,000 confirmed and suspected cases, according to reporting published July 16, 2026. That scale makes it one of the larger known Cyclospora events in recent years, and public health experts cited in the report said the total is likely an underestimate because many patients are never tested.

Cyclospora is a parasite that spreads only through human waste, not through cattle or other farm animals. The U.S. Food and Drug Administration has historically linked outbreaks to raspberries in 34% of traced cases, basil in 31%, cilantro in 10%, and salad mixes in 10%, but experts said those foods may be acting more as carriers than root causes.

The parasite also takes about 1 to 2 weeks after being excreted to become infectious in the environment. That delay makes it harder for investigators to pinpoint a single ingredient or shipment once people start getting sick across multiple states.

What this means in farm regions and produce states

The report points most directly to agricultural areas where irrigation and produce processing are central parts of the food chain, including places such as California’s Salinas Valley, which was cited in the coverage. What is confirmed is that contaminated water is being treated as a serious possible source. What is not yet known is the specific field, processor, or water system behind the outbreak.

A 2023 Irrigation and Water Management Survey found that 45% of all irrigation water used in U.S. agriculture came from surface water. Experts noted that surface water can be contaminated by leaking septic systems, sewer failures, garbage, or human waste, and it does not take many Cyclospora organisms to cause infection.

The Food Safety Modernization Act also allows growers to harvest produce up to four days after water is applied. Experts said that timing can create a window in which contamination remains on crops before they are picked, packed, and sent into the national food supply.

Why water and weakened oversight are getting the focus

Amy Liebman of Migrant Clinicians Network said the center of the problem is more likely crop contamination from irrigation water and food processing than workers themselves. She also said employer-provided farmworker housing is often crowded, sanitation can be poor, and some drinking water comes from wells or springs that may not be rechecked after workers move in.

Renai Edwards, also with Migrant Clinicians Network, said the size of the outbreak suggests contaminated irrigation systems or water used in processing may be the likeliest source. She also said sewage or septic system failures can contaminate both fields and processing plants, widening the number of products that could be affected.

Oversight has also been reduced. Since July 2025, FoodNet reporting for Cyclospora became optional, and federal staffing cuts affected the CDC, FDA, and USDA, according to the report. For shoppers, that means outbreak tracking may move slowly while investigators work backward through farms, water systems, and processing lines to identify a confirmed source.
