Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/2 red bell pepper, diced
  • 1/2 cucumber, chopped
  • 1/4 cup chopped fresh parsley or cilantro
  • 2 tablespoons olive oil
  • Juice of 1 orange
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions:

Cook the Quinoa:

Rinse quinoa under cold water. In a saucepan, bring quinoa, water, turmeric, and salt to a boil. Reduce to a simmer, cover, and cook for 15 minutes or until water is absorbed. Fluff with a fork and let cool.
