Looking for a delicious, fuss-free dinner that the whole family will love? This Cheesy Chicken & Broccoli Casserole is a comforting, wholesome dish packed with protein, veggies, and cheesy goodness. With simple ingredients and easy preparation, it’s a perfect meal for busy evenings. Plus, it’s great for meal prepping, making leftovers just as tasty the next day!

Instructions

Step 1: Preheat & Prepare Ingredients

Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Step 2: Cook the Broccoli

If using fresh broccoli, steam it for 3-4 minutes until slightly tender but still bright green. If using frozen broccoli, simply thaw and drain any excess moisture.

Step 3: Mix the Casserole Base

In a large mixing bowl, combine the cooked chicken, steamed broccoli, 1 1/2 cups of cheddar cheese, cooked rice (if using), sour cream, cream of chicken soup, milk, garlic powder, onion powder, salt, pepper, and paprika. Mix well until evenly coated.

Step 4: Assemble the Casserole

Pour the mixture into the prepared baking dish, spreading it out evenly.

Step 5: Add the Topping

In a small bowl, mix the crushed Ritz crackers (or breadcrumbs) with melted butter. Sprinkle over the casserole.

Step 6: Bake the Casserole

Bake uncovered for 25-30 minutes, or until the casserole is bubbling and the top is golden brown.

Step 7: Serve & Enjoy

Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley if desired.
