Instructions
Step 1: Prepare the Cupcakes
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Mix in the mashed bananas.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely.

Step 2: Make the Rum Buttercream Frosting
- In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, one cup at a time, beating well after each addition.
- Mix in the dark rum, heavy cream, and vanilla extract. Beat until the frosting is smooth and fluffy.

Step 3: Prepare the Caramelized Banana Topping
- In a skillet over medium heat, melt the butter and stir in the brown sugar.
- Add the banana slices and cook for 2–3 minutes, flipping once, until caramelized.
- (Optional) Add the rum and cook for an additional minute, letting the alcohol cook off. Remove from heat and allow to cool slightly.
Step 4: Assemble the Cupcakes
- Pipe or spread the rum buttercream frosting onto the cooled cupcakes.
- Drizzle caramel sauce over the frosting for an extra touch of decadence.
- Top each cupcake with a slice of caramelized banana and a sprinkle of cinnamon, if desired.
Tips and Variations
- Alcohol-Free Option: Substitute rum with vanilla extract in both the frosting and caramelized bananas for a kid-friendly version.
- Add a Crunch: Sprinkle crushed pecans or walnuts over the frosting for added texture.
- Banana Substitutes: If you don’t have fresh bananas, use banana extract or banana baby food as an alternative.
- Make Ahead: You can bake the cupcakes a day in advance and frost them just before serving.
