Bananas Foster is a beloved dessert originating from New Orleans, combining the sweetness of bananas with the bold flavors of caramel and rum. These Bananas Foster Cupcakes are a creative spin on this classic, pairing a moist banana cake base with a luscious rum buttercream frosting. With every bite, you’ll experience the nostalgia of the original dessert in a fun and portable form.

Instructions

Step 1: Prepare the Cupcakes

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Mix in the mashed bananas.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
  7. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  8. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely.

Step 2: Make the Rum Buttercream Frosting

  1. In a large bowl, beat the softened butter until creamy.
  2. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  3. Mix in the dark rum, heavy cream, and vanilla extract. Beat until the frosting is smooth and fluffy.

Step 3: Prepare the Caramelized Banana Topping

  1. In a skillet over medium heat, melt the butter and stir in the brown sugar.
  2. Add the banana slices and cook for 2–3 minutes, flipping once, until caramelized.
  3. (Optional) Add the rum and cook for an additional minute, letting the alcohol cook off. Remove from heat and allow to cool slightly.

Step 4: Assemble the Cupcakes

  1. Pipe or spread the rum buttercream frosting onto the cooled cupcakes.
  2. Drizzle caramel sauce over the frosting for an extra touch of decadence.
  3. Top each cupcake with a slice of caramelized banana and a sprinkle of cinnamon, if desired.

Tips and Variations

  • Alcohol-Free Option: Substitute rum with vanilla extract in both the frosting and caramelized bananas for a kid-friendly version.
  • Add a Crunch: Sprinkle crushed pecans or walnuts over the frosting for added texture.
  • Banana Substitutes: If you don’t have fresh bananas, use banana extract or banana baby food as an alternative.
  • Make Ahead: You can bake the cupcakes a day in advance and frost them just before serving.
