Ingredients

For the Salmon:

  • 4 salmon fillets (around 6 oz each)
  • 2 tbsp olive oil
  • 1 lemon, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/2 red onion, thinly sliced
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 1 tbsp fresh lemon juice

For Garnish:

  • 2 tbsp fresh parsley, chopped (optional)
  • 1/2 cup feta cheese, crumbled (optional)

Instructions

 Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C) and lightly grease a baking dish or line it with parchment paper.

 Step 2: Prepare the Salmon

Place the salmon fillets in the prepared baking dish. Drizzle olive oil over the fillets and season with salt, pepper, and dried oregano. Sprinkle minced garlic evenly over the salmon fillets.

 Step 3: Add the Vegetables and Lemon

Scatter the halved cherry tomatoes, sliced Kalamata olives, and red onion around the salmon fillets. Place thin lemon slices on top of each fillet. Squeeze fresh lemon juice over the entire dish.

 Step 4: Bake the Salmon

Bake in the preheated oven for 20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

 Step 5: Garnish and Serve

Remove from the oven and sprinkle with fresh parsley and crumbled feta cheese (if using). Serve immediately with your choice of sides.
