This Asparagus Tart is a simple yet elegant dish featuring crisp, buttery puff pastry, creamy
cheese, and tender asparagus spears. It’s perfect for brunch, lunch, or a light dinner and
makes a stunning appetizer for any occasion. With its flaky crust and rich, cheesy filling,
this tart delivers a delightful balance of flavors and textures in every bite.

Instructions:

Prepare the Pastry:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Roll out the puff pastry on a lightly floured surface into a rectangular shape.
Transfer it to the baking sheet.
  • Using a knife, score a 1/2-inch border around the edges of the pastry (do not cut
through completely). This will create a crispy raised edge.
  • Prick the inside of the pastry all over with a fork to prevent it from puffing up too
    much.

Make the Cheese Spread:

  • In a bowl, mix together ricotta, Parmesan, shredded Gruyère, lemon zest, Dijon
    mustard, salt, and pepper.
  • Spread this mixture evenly over the puff pastry, keeping it inside the scored border.

Assemble the Tart:

  • Arrange the trimmed asparagus spears neatly over the cheese mixture, laying them
    side by side.
  • Brush the asparagus with olive oil and season with salt, black pepper, and red
    pepper flakes (if using).
  • Brush the edges of the puff pastry with the beaten egg for a golden crust.

Bake the Tart:

  • Place the tart in the oven and bake for 20-25 minutes, or until the pastry is golden
    brown and crispy.
  • Remove from the oven and let it cool slightly.

Garnish and Serve:

  • Sprinkle with fresh thyme or parsley.
  • Drizzle with a little balsamic glaze for extra depth of flavor (optional).
  • Slice and serve warm. Enjoy!

FAQs:

  1. Can I use a different cheese?
Yes! You can substitute goat cheese, cream cheese, or feta for ricotta, or use cheddar or Swiss cheese instead of Gruyère.
  2. Can I make this tart ahead of time?
This tart is best served fresh, but you can bake it a few hours in advance and reheat it in the oven at 350°F (175°C) for 5-10 minutes before serving.
  3. Can I add other toppings?
Absolutely! Try adding prosciutto, cherry tomatoes, caramelized onions, or a sprinkle of pine nuts for extra flavor.
